My Own French Onion Soup

I'm gonna cook this for my boyfriend:

It's funny though. Julia Child's recipe for this changes over the years-- Mastering the Art of French Cooking and The Way to Cook have slightly different variations. Also they stress, unlike this video, that the stock is exquisite if it's home-made. Holy shit, home-made broth? A quick skim of MtAoFC shows you want about 3lb of random pieces of meety beef and bones. Cooked down for 5 hours, which I can do the day prior so it's cool. Hm .....

I may just have to doctor up canned broth and make do. However since Sean loves this soup, and I've never made it before, I really want it to be special. Oh, did I mention there's a variation where you put hearty, broiled french bread and a shit-ton of cheese on top and bake the soup for another 30-40 minutes? Which should I do? Hm .....

Time consuming and potentially budget-killing, but otherwise simple and delicious. How will the oniony ambrosia turn out? Stay tuned!
